Aromas of melon, Bosc pear, peaches and cream, brioche, and nutmeg are followed by a palate that is fruit-forward, round, consists of baked apple, quince and creamy marzapan. The finish is bright, long and refreshing. This is our first wine produced from our Ovum egg-shaped wooden fermenter, which has garnered added complexity and texture due to the natural oak and related features of this unique vessel.
Ovum is the world’s first egg-shaped barrel crafted from oak and represents a significant technical achievement for the cooperage industry. Developed by the team at Tonnellerie Taransaud, our primary supplier of French oak barrels, the egg-shaped Ovum barrel has become one of the most exciting and sought-after innovations for world’s most talented winemakers.
While bottling occurred earlier this summer with plenty of time for most white wines to rest, our winemaker/co-founder, Gustavo A. Gonzalez, finds that our first wine produced from the Ovum has added complexity and texture due to the natural oak and related features of this unique vessel, that will benefit from some extended aging. Therefore, he recommends laying down this wine for another month or so before enjoying.
